Mom on the Run

My officemates and I, who are under the same department got off early from work today so I thought going to the grocery store and get something to prepare for dinner. Usually, I go out of the office at 9pm. Good thing we had the chance to go out 2 hours earlier. I am planning to serve vegetable salad vinaigrette later. Being a self confessed vegetarian, I want my family especially the kids to indulge into eating a healthy diet like fruits and veggies.

I have served this vegetable salad many times and they really love it. It's so easy to prepare. Just mix in broccoli, lettuce, filleted chicken and optional grapes. For the final touch, add vinaigrette and seasoning to taste. I'm sure you'll like it, too.
